I enjoy preparing toppings to my dishes as much as I enjoy cooking and this is one of my favorites to keep handy. Not only do the crispy garlic slices add flavor and crunch but a drizzle of the oil adds a subtle allium scent when drizzled on a finished dish.
Ingredients
- 1 small head of garlic, each clove sliced thinly (I use a mandoline)
- ½ c olive oil
Instructions
- Add oil and garlic to small saucepan (I use a tiny one that is designed to heat up a cup of milk) and set on the stove on medium-low
- Fry garlic slices until golden and crisp
- Carefully drain oil using small strainer into a heatproof jar
- Put garlic slices in a small bowl lined with paper towels and add salt
